Jelly Ideas
Use the jelly just as you'd use any other. It is a bit tart for some people. The jelly makes peanut butter explode with flavour.

It is normal for the jelly to "weep" or you may see some liquid on top. We reduce the added sugar and pectin and therefore weeping is normal. The reduced sugar and pectin is a compromise to make the jelly easily spreadable. Use the juice along with the jelly.

Using dehydrated cherries is like any other dehydrated product. First we make sure that we remove enough water to bring the water activity down to a safe level for storage. This assures you the cherries you have will store at room temperature for a long time. (The optimum storage is likely below 60⁰ F and in a dark place. Freezing will extend the shelf life. You need to exclude the air.)

The cherries can be eaten right out of the bag. Some find them more palatable if you first soak them in hot water. Some add sugar to the water or your favourite sweetener like honey. Stir and in 3 or 4 minutes you will have a delicious soft snack or you can add them to your salad. If you rehydrate them; consume in a couple days for food safety. Consider refrigerating depending on the ingredients and the time to consumption.

In commercial kitchens they often use tea water (the hot water used for making tea and other hot beverages). Use enough water to cover the cherries and stir for 3 or 4 minutes. Drain. Savour. (By the way the drained water may form an important base for your next hot drink.)

We do not like to constrain your cooking wisdom with a lot of specific recipes. Although here are some ideas:

CEREAL - top your favourite cereal with a taste explosion

SALADS - add partially rehydrated cherries

SCONES - Recipe

CRESCENTS - sprinkle dehy cherries over the dough before rolling. Bake. Cool. Enjoy.

DESSERTS - use dehydrated cherries in rice pudding

MEATS - especially white meats like chicken, turkey, or pork. Dehydrated cherry sauce makes an excellent side dish instead of cranberries.

    Cook whole wheat pasta (1 1/2" diameter), about 4 cups. Drain and lightly mix with oil (olive or canola).
    Add 1/8 (or to taste) dried cherries and enjoy.

GRANOLA - add dehydrated cherries.

    1/2 cup of vanilla yogurt
    1 freshly chopped banana
    1/8 cup (or to taste) dried cherries
    Mix all of the ingredients in a bowl and enjoy.
        (try omitting the banana)

CHOCOLATE - anything chocolate; Baked Alaska, cookies, bars, or bark (see below).
    - or melt you favourite chocolate and pour 2/3 into a cookie sheet on parchment paper. Sprinkle dehy cherries on the chocolate (you can spread the chocolate or cherries around with a spadula. Avoid water or moisture. Chocolate doesn't like it. Pour the remaining 1/3 over the top. Cool. Break into pieces to snack on. The chocolate may melt in your hands as it isn't coated.

CHOCOLATE CAKE - add cherries to your favourite recipe

STORAGE Store unopened packages in a cool, dry place. After opening, keep package tightly closed with a plastic tie or rubber band, or store cherries in a tightly closed plastic bag.

USES AND TIPS Dried cherries are a quick and easy snack, and can be eaten right out of the package. Add to rice dishes, stuffing, salads, hot or cold cereals, puddings, and baked items. For easier chopping, use an oiled knife or blade; also try cutting with kitchen scissors. Dried cherries keep cakes, muffins, and cookies moist. Combine with nuts or cereals to make trail mix.

TURKEY CHERRY WRAP MAKES 4 SERVINGS Ingredients 1 pound turkey breast, chopped ½ cup low-fat mayonnaise 1 tablespoon mustard ¼ teaspoon salt ¼ teaspoon black pepper 1 cup dried cherries ¾ cup carrot, shredded ½ cup cucumber, finely chopped ¼ cup onion, minced 4 flour tortillas (small size)
1. Mix mayonnaise, mustard, salt, and pepper in a bowl.
2. Gently mix in turkey, cherries, carrots, cucumbers, and onion.
3. Lay tortilla on a plate and spoon ¾ cup turkey mixture just below the center of each tortilla. Fold up bottom portion and roll tightly.

Ingredients ½ cup margarine, softened ½ cup brown sugar, firmly packed (or ½ cup regular sugar) 1 egg ½ teaspoon vanilla extract ¾ cup all-purpose flour ½ teaspoon baking powder ¼ teaspoon salt 1 cups oats ¾ cup dried cherries ½ cup chocolate chips
1. Preheat oven to 350 degrees F.
2. Mix margarine and brown sugar until creamy.
3. Mix in eggs and vanilla; beat well.
4. Combine flour, baking powder, and salt; add to egg mixture.
5. Stir in oats, cherries, and chocolate chips.
6. Drop rounded tablespoonfuls onto ungreased cookie sheet.
7. Bake for 10 to 12 minutes, until golden brown.
8. Let cool for 1 minute; move to a rack or plate.
